Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup white vinegar
  • 1/4 cup apple juice
  • 2 teaspoons ground horseradish
  • 1 teaspoon fresh-squeezed lemon juice
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon Monkfruit Sweetener optional; taste to see if you want the mixture a little sweeter
  • 1/3 cup olive oil
  • 3/4 cup mayo

Method
 

  1. Start by trimming the chicken breasts well, removing all visible fat and membranes. This ensures a better texture and flavor when grilling.
  2. Next, cut small slits going crosswise down each breast. This allows the marinade to penetrate better, infusing the chicken with flavor.
  3. In a bowl, combine the white vinegar, apple juice, horseradish, lemon juice, and cayenne pepper. Mix well to create a zesty marinade.
  4. Taste the marinade to determine if you would like it sweeter. If desired, add the Monkfruit Sweetener to achieve your preferred level of sweetness.
  5. Divide this mixture in half, setting one part aside for the sauce later.
  6. Add the olive oil to the other half of the marinade. Mix thoroughly to form a rich marinade.
  7. Place the chicken into a large Ziploc bag and pour the marinade over the top. Seal the bag, ensuring all the chicken is coated well.
  8. Let the chicken marinate in the fridge for about 8 hours. This is crucial for allowing the flavors to meld and penetrate the meat, leading to tender and flavorful chicken.
  9. While the chicken is marinating, mix the mayo with the other half of the marinade and store it in a plastic container in the refrigerator for serving later.
  10. When ready to grill, spray the grill with non-stick grilling spray or brush it with oil to prevent sticking.
  11. Preheat your grill to high heat, then turn it down to medium-high as you place the chicken on the grill.
  12. Lay the chicken breasts at an angle to the grill grates; cook for about 4 minutes. Check for nice grill marks before you rotate.
  13. Once you see good grill marks, rotate the chicken pieces the other way and cook for another 4 minutes.
  14. After about 8 minutes, turn the chicken to the other side and let it cook for an additional 2 to 4 minutes. The total cooking time may vary based on the thickness of the chicken and your grill's heat.

Notes

If you happen to have any leftover chicken, it can be stored in an airtight container in the fridge for up to three days. For longer storage, freeze the marinated chicken in a freezer-safe bag for up to three months. Just thaw in the fridge before grilling.
