Ingredients

  • 4 slices bread of choice
  • 1/3 cup mashed banana or coconut cream, or 2 flax eggs
  • 1/4 tsp salt
  • 3 tbsp milk of choice
  • 1 tbsp sweetener of choice
  • optional sprinkle of cinnamon
  • optional 2 tsp nutritional yeast, for flavor

Equipment

  • Baking Sheet
  • Frying Pan
  • Whisk
  • Mixing Bowl
  • Chef's Knife

Method

  1. Unless you like soggy French toast (I actually do!), either let the bread sit uncovered overnight or bake the slices at 300°F for 15 minutes or until they dry out.
  2. Whisk together all ingredients except the bread.
  3. Dip each slice fully into the mixture.
  4. Place slices in a shallow dish, pour remaining liquid on top, and let soak for 10-15 minutes, flipping halfway through.
  5. Grease a nonstick pan.
  6. Add the slices to the pan and cook for 1 and a half minutes, then flip and cook for an additional minute or until lightly browned.
  7. Repeat with remaining slices.

Notes

  • Tip 1: Leftover Vegan French Toast can be stored in an airtight container in the fridge for up to three days.
  • Tip 2: You can also freeze the cooked slices. Just place them in a single layer on a baking sheet, freeze until firm, then transfer to a freezer bag. Reheat in a toaster or microwave for a quick breakfast.
  • Tip 3: Serve with fresh fruits like berries or banana slices for a refreshing contrast to the warm toast.
  • Tip 4: Try adding chocolate chips or nuts to the batter for some extra flavor and texture.
  • Tip 5: Add a dash of vanilla or almond extract to the batter for an additional flavor layer.
