Ingredients
  

  • 6 ounces cream cheese
  • 1 cup buffalo sauce divided
  • 1/2 cup Creamy Ranch Dressing divided
  • 1/3 cup shredded cheddar cheese
  • 1 tablespoon chopped chives
  • 4 boneless skinless chicken breasts
  • Salt and pepper
  • 1 tablespoon olive oil
  • Crumbled blue cheese for serving

Method
 

  1. In a medium bowl, combine the cream cheese, ½ cup of buffalo sauce, ¼ cup of Creamy Ranch Dressing, cheddar cheese, and chives. Mix until everything is well blended and smooth. Set this delicious filling aside for now.
  2. Take your chicken breasts and season both sides generously with salt and pepper. This step adds essential flavor to the chicken.
  3. Using a sharp knife, carefully cut a pocket lengthwise in each chicken breast. Be cautious not to cut all the way through, as you want to keep the filling inside.
  4. Stuff each chicken breast with the prepared filling. Depending on how much filling you use, you may need to secure the openings with toothpicks.
  5. In a large skillet, heat the olive oil over medium/high heat until it’s hot and glistening. This ensures a nice sear on your chicken.
  6. Place the stuffed chicken breasts in the skillet. Brush the tops of each breast with half of the remaining buffalo sauce. Sear for about 4 to 5 minutes until golden brown.
  7. Carefully flip the chicken breasts and brush the other side with the remaining buffalo sauce. Continue to cook for an additional 4 to 5 minutes.
  8. Flip the chicken once more, basting it in the sauce if desired. Cook until the internal temperature reaches 165°F, which may take another 1 to 2 minutes.
  9. Once done, remove the skillet from the heat and drizzle the remaining ¼ cup of Creamy Ranch Dressing over the chicken. Finish by sprinkling with crumbled blue cheese for extra flavor.
