Ingredients
  

  • cups granulated white sugar
  • 1 cup buttermilk
  • 1 tablespoon all-purpose flour
  • 2 large eggs
  • 2 large egg yolks
  • ½ teaspoon vanilla extract
  • 1 medium lemon, juiced and zested
  • 1 pinch salt
  • 1 9-inch unbaked pie shell
  • ¼ cup honey
  • 1 medium lime, juiced
  • 2 pints strawberries, hulled and halved
  • 1 cup whipped cream

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large bowl, whisk together 1½ cups of granulated white sugar, 1 cup of buttermilk, 1 tablespoon of all-purpose flour, 2 large eggs, 2 large egg yolks, ½ teaspoon of vanilla extract, the juice and zest of 1 medium lemon, and a pinch of salt. Mix until it is well combined and smooth.
  3. Once everything is blended nicely, pour the filling into your prepared 9-inch unbaked pie shell.
  4. Bake the pie in the preheated oven for about 40 to 50 minutes. You’ll know it’s done when the filling is just set and still slightly jiggly in the center.
  5. After baking, carefully remove the pie from the oven and let it cool to room temperature.
  6. When ready to serve, prepare the strawberry topping. In a small pan, heat ¼ cup of honey with the juice of 1 medium lime until melted.
  7. In a medium bowl, pour the honey-lime mixture over the hulled and halved strawberries. Let them stand for at least 5 minutes.
  8. Before serving, arrange the strawberries on top of the cooled pie using a slotted spoon.
  9. Top individual servings with a dollop of whipped cream and enjoy!
