Ingredients

  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 2.5 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon almond extract
  • 18 sheets cinnamon graham crackers
  • 5 cups sliced strawberries
  • 1 garnish fresh mint for garnish, optional

Equipment

  • Hand-held electric mixer

Method

  1. Start by grabbing a large mixing bowl. Using a hand-held electric mixer, beat the softened cream cheese and powdered sugar together until the mixture is completely smooth and creamy.
  2. Next, add in the heavy whipping cream, vanilla extract, and almond extract. Beat on high speed until stiff peaks form.
  3. Prepare an 11×7-inch baking dish by spreading a small amount of the cream cheese mixture on the bottom.
  4. Place ⅓ of the graham crackers in a single layer over the cream cheese mixture.
  5. Spread ⅓ of the remaining cream cheese mixture over the graham crackers.
  6. Top with 2 cups of sliced strawberries. Spread them evenly.
  7. Add another layer of graham crackers over the strawberries, followed by another ⅓ of the cream cheese mixture.
  8. Top with another 2 cups of sliced strawberries and then add the final layer of graham crackers.
  9. Spread the remaining cream cheese mixture on top and scatter the remaining sliced strawberries on top.
  10. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or up to 8 hours, before serving.
  11. When ready to serve, garnish with fresh mint if desired. Slice into squares and enjoy!

Notes

  • Tip 1: You can use regular graham crackers or chocolate graham crackers instead of cinnamon.
