Method
- Combine soy sauce, honey, and cilantro in a bowl and set aside.
- Using a large sauté pan, cook the onion in 1 tablespoon of oil over medium heat for 2 minutes.
- Add the bell pepper and cook an additional 2 minutes.
- Add the garlic and ginger and cook for 1 minute then add the chicken or turkey to the pan and sauté for an additional 7 minutes or until cooked through.
- Stir in the soy sauce mixture, salt and cook for 2 minutes or until juices evaporate.
- Serve in lettuce cups (to eat then just roll the lettuce around the stir-fried chicken and eat them like a burrito).
Notes
- Storage: Leftovers can be stored in an airtight container in the refrigerator for up to three days. Keep the filling separate from the lettuce to maintain crunchiness.
- Freezing: You can freeze the stir-fried filling for a quick meal later. Just let it cool, then pack it tightly in a freezer-safe container for up to two months.
- Pairing: These lettuce cups pair beautifully with a side of jasmine rice or quinoa for a more filling meal.
- Variations: Feel free to experiment with different proteins like shrimp or tofu, and switch up the veggies based on what you have on hand.
- Make it spicy: To add a kick, include chili paste or sliced jalapeños to the stir-fry.
- Garnishing: Top your lettuce cups with sliced avocado or a squeeze of lime for added flavor.
