Method
- Start by washing, cutting, and preparing the vegetables and herbs you’ll be using. Make sure everything is fresh and crisp for the best results.
- Next, according to the package directions, cook the 4 ounces rice vermicelli. Once cooked, rinse them in cold water to stop the cooking process and keep them from becoming mushy.
- Once the noodles are rinsed, gently toss them in 1 teaspoon sesame oil. This step helps prevent the noodles from sticking together and adds a lovely flavor.
- Now, it’s time to prepare the Thai Peanut Dressing. Whip it up according to your favorite recipe or use a store-bought version to save time.
- Divide the cooked noodles evenly between 4 bowls. Make sure each bowl has a generous portion of noodles as they will be the base of your dish.
- Add ¼ cup shredded red cabbage, shredded lettuce, julienned cucumber, and shredded carrots into each bowl. This will create a colorful and inviting presentation.
- Drizzle the Thai Peanut Dressing over the prepared bowls. Don’t be shy, as this step brings all the flavors together.
- Finally, garnish each bowl with minced green onions, fresh mint leaves, and cilantro for that extra pop of flavor and color.
- Serve immediately, and enjoy your beautifully crafted Spring Roll in a Bowl!
Notes
While it's best enjoyed fresh, you could freeze the cooked noodles and vegetables separately. Just make sure they’re well-packed to avoid freezer burn.
