  • ¼ cup fresh mint leaves divided

  • 1 recipe Thai Peanut Dressing

  1. Start by washing, cutting, and preparing the vegetables and herbs you’ll be using. Make sure everything is fresh and crisp for the best results.
  2. Next, according to the package directions, cook the 4 ounces rice vermicelli. Once cooked, rinse them in cold water to stop the cooking process and keep them from becoming mushy.
  3. Once the noodles are rinsed, gently toss them in 1 teaspoon sesame oil. This step helps prevent the noodles from sticking together and adds a lovely flavor.
  4. Now, it’s time to prepare the Thai Peanut Dressing. Whip it up according to your favorite recipe or use a store-bought version to save time.
