Ingredients
  

  • 5 ounces Spring greens
  • 2 to 3 cups cooked chicken
  • 1 cup cherry tomatoes
  • cup raw pecans
  • cup red onion
  • ½ cup feta cheese
  • cup dried cranberries
  • Balsamic Vinaigrette

Method
 

  1. Begin by preparing the dressing if you’re making homemade salad dressing. Combine the ingredients in a small bowl and refrigerate until ready to use.
  2. Chop the Spring greens on a cutting board to your desired size pieces. This extra step makes salad so much easier to scoop up and eat!
  3. Transfer the greens to a large bowl, along with the chopped chicken, cherry tomatoes, chopped pecans, red onion, feta cheese, and dried cranberries.
  4. Drizzle in the balsamic vinaigrette and toss everything together until the salad ingredients are coated with your desired amount of dressing.
  5. Taste the salad for flavor and add anything else you’d like.
  6. Serve salad in two large bowls and enjoy!

  • Use leftover grilled chicken: Feel free to use leftover grilled chicken, baked chicken, or store-bought rotisserie chicken.
