- Preheat your oven to 375º F.
- Spray a baking dish with olive oil nonstick baking spray.
- Carefully place the chicken breasts into the prepared baking dish.
- Season the chicken with salt and pepper.
- Now, it’s time to bake the chicken for about 15 minutes.
- While the chicken is baking, take a medium bowl and combine the artichoke hearts, thawed spinach, chopped shallots, and minced garlic.
- Add the Greek yogurt and mayonnaise to the vegetable mixture. Stir until everything is well combined.
- Next, add in the Parmesan cheese and mozzarella cheese to the mixture.
- Once the chicken has baked for 15 minutes, carefully pour the creamy mixture on top of the chicken.
- Return the dish to the oven and bake for an additional 20 to 25 minutes.
- After baking, let the dish stand for about 5 minutes before serving.
