Ingredients
  

  • 1 spray Olive oil spray
  • 8 pieces Chicken breasts
  • 1 can Artichoke hearts packed in water, drained 13.75 oz
  • 10 oz Spinach, thawed and squeezed
  • 2 pieces Shallots, chopped
  • 1 clove Garlic, minced
  • 1/2 cup Greek yogurt
  • 1/2 cup Mayonnaise
  • 1/2 cup Parmesan cheese
  • 1/2 cup Grated mozzarella cheese

Method
 

  1. Preheat your oven to 375º F.
  2. Spray a baking dish with olive oil nonstick baking spray.
  3. Carefully place the chicken breasts into the prepared baking dish.
  4. Season the chicken with salt and pepper.
  5. Now, it’s time to bake the chicken for about 15 minutes.
  6. While the chicken is baking, take a medium bowl and combine the artichoke hearts, thawed spinach, chopped shallots, and minced garlic.
  7. Add the Greek yogurt and mayonnaise to the vegetable mixture. Stir until everything is well combined.
  8. Next, add in the Parmesan cheese and mozzarella cheese to the mixture.
  9. Once the chicken has baked for 15 minutes, carefully pour the creamy mixture on top of the chicken.
  10. Return the dish to the oven and bake for an additional 20 to 25 minutes.
  11. After baking, let the dish stand for about 5 minutes before serving.
