  • 2 lbs boneless, skinless chicken breast about 3-4 chicken breasts
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 2 tsp Dijon Mustard
  • 1/4 Onion finely chopped
  • 8 oz Mozzarella Cheese, grated
  • 3 oz Freshly Grated Parmesan
  • 1/2 Can Artichoke Hearts, drained and diced
  • 4 cups Fresh Spinach, coarsely chopped about 2 oz

Method
 

  1. Preheat your oven to 375˚F. This ensures that your dish will cook evenly and perfectly, creating a golden brown topping.
  2. Lay the chicken breasts flat in a large baking dish. Season with garlic powder, 1/4 tsp salt, and 1/4 tsp pepper. Make sure to coat them well; this adds flavor directly to the meat.
  3. In a separate bowl, mix the cheeses together, then set aside about a cup of this mixture. This will be your topping, and it’s what makes this dish irresistible!
  4. In another large bowl, combine the mayonnaise, sour cream, Dijon mustard, finely chopped onion, remaining salt, and pepper. Whisk until well combined; this creamy mixture is the heart of your bake.
