Smoked Salmon Deviled Eggs

Ingredients
  

  • ½ teaspoon dried garlic
  • ½ teaspoon dried onion
  • ¾ teaspoon poppy seeds
  • 1 teaspoon sesame seeds
  • ¼ teaspoon kosher salt
  • 2 tablespoons olive oil
  • 1 cup fresh breadcrumbs
  • ½ cup sour cream
  • 2 ounces cream cheese, at room temperature
  • 2 tablespoons mayo
  • 1 tablespoon freshly squeezed lemon juice, plus more to taste
  • 8 hard-boiled eggs hard-boiled eggs
  • 2 tablespoons minced chives, plus extra for garnish
  • 4 ounces smoked salmon, chopped fine
  • Kosher salt
  • Freshly ground black pepper

Method
 

  1. Combine dried garlic, dried onion, poppy seeds, sesame seeds and kosher salt in a small bowl, stirring to combine.
  2. Warm olive oil in a medium skillet over medium heat. Add the fresh breadcrumbs and cook until golden and crunchy (5 to 6 minutes).
  3. Stir in everything bagel spice to taste. You will have extra spice mix.
  4. Add sour cream, cream cheese, mayo and lemon juice to a medium bowl, whisking until well-combined.
  5. Separate the egg yolks from egg whites. Place the yolks in a bowl with the sour cream mixture, and the whites on a large plate.
  6. Add chives, smoked salmon, ½ teaspoon salt and ½ teaspoon pepper to the bowl with the yolks. Using a fork, mash and mix to combine.
  7. Season to taste with additional salt, pepper and lemon juice.
  8. Spoon or pipe the yolk mixture into the well of each egg white.
  9. Top each egg with a sprinkling of breadcrumbs. Finish with a sprinkling of minced chives.
