Ingredients
  

  • 4 breasts Boneless skinless chicken fresh or frozen
  • 2 tablespoons Taco seasoning
  • 1 Chopped green bell pepper
  • 1 (14-ounce) can Corn drained
  • 1 (14-ounce) can Black beans rinsed and drained
  • 1 ½ - 2 cups Salsa
  • Cooked rice
  • Chopped cilantro
  • Chopped green onions
  • Sour cream
  • Shredded cheese
  • Diced tomatoes

Method
 

  1. Place the 4 boneless skinless chicken breasts in the bottom of the slow cooker. Sprinkle with 2 tablespoons taco seasoning. Add the 1 chopped green bell pepper, 1 (14-ounce) can corn, 1 (14-ounce) can black beans, and 1 ½ - 2 cups salsa. Cover and cook on HIGH for 3 ½ to 4 hours or until chicken is cooked through. Shred the chicken and serve over cooked rice. Top with desired toppings.
