Ingredients
  

  • 1/4 cup Cilantro
  • 3 stalks Green Onion
  • 2 medium Tomato
  • 1 pound Chicken Breast
  • 1/8 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 2/3 cups Chicken Broth
  • 1 cup Corn
  • 15 ounces Black Beans
  • 1 teaspoon Cumin
  • 1 1/2 cups Brown Rice

Method
 

  1. Chop & dice fresh cilantro, green onions, and tomatoes.
  2. Season the chicken with salt, black pepper, garlic powder, and onion powder on both sides.
  3. Add chicken broth, corn, black beans, cilantro, green onions, tomatoes, cumin, and seasoned chicken to a slow cooker.
  4. Cook on high for 6 hours.
  5. Shred the chicken with a fork and serve over cooked brown rice.
  6. Feel free to add favorite toppings including more fresh cilantro or green onions.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently on the stovetop or microwave.
