Slow Cooker Sesame Chicken

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breasts cut into 1-inch chunks
  • 1/4 cup cornstarch
  • cooking spray
  • 1/4 cup sesame oil
  • 3/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 6 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon sesame seeds
  • 2 tablespoons sliced green onions

Equipment

Method
 

  1. Place the chicken pieces in a large ziplock bag.
  2. Add the cornstarch and toss to coat evenly.
  3. In a large measuring cup, combine all the sauce ingredients: honey, low sodium soy sauce, rice vinegar, sesame oil, garlic, and ginger. Add the sauce to the ziplock bag with the chicken. Toss to combine. Freeze for later or place in the fridge to marinate if using within one day.
  4. When ready to cook, thaw the bag (if frozen) with the Honey Sesame Chicken.
  5. Coat a slow cooker with cooking spray and add the mixture to the slow cooker.
  6. Cook on HIGH for 3 hours or on LOW for 6 to 7 hours.
  7. Sprinkle with sesame seeds and green onions, then serve with rice.
