Slow Cooker Queso Chicken Tacos

Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 1-ounce package taco seasoning
  • 1 10-ounce can Rotel diced tomatoes and green chilies
  • 1.5 cups Mexican cheese dip

Equipment

  • 6-qt Slow Cooker

Method
 

  1. Place chicken in a 6-qt slow cooker. Sprinkle with taco seasoning and top with tomatoes.
  2. Cover and cook on LOW for 4 to 6 hours.
  3. Remove chicken from slow cooker and shred with two forks. Return chicken to slow cooker and stir in cheese dip.
  4. Serve with tortillas or hard taco shells and favorite taco toppings.

Notes

  • Tip 1: If you feel that there is too much liquid in the slow cooker after the chicken cooks, you can drain it out of the crockpot.
  • Tip 2: The amount of liquid will depend on the size and brand of chicken you use.
  • Tip 3: You can use more or less cheese dip. Adjust measurements to your personal preference.
  • Tip 4: You can freeze leftover chicken for later.
  • Tip 5: I use Gordo’s or Pancho’s White Queso dip found in the refrigerated cheese section at the store.
