  • 1 cup crushed pineapple with juice
  • ½ cup crushed tomatoes
  • ½ cup salsa
  • 2 teaspoons soy sauce
  • 1 tablespoon cornstarch optional
  • ¼ cup water

Equipment

  • Chef's Knife
  • Mixing Bowl
  • Slow Cooker

Method

  1. Place the chicken thighs in a slow cooker.
  2. In a mixing bowl, mix together pineapple with juice, crushed tomatoes, salsa, and soy sauce.
  3. Pour the mixture over the chicken.
  4. Cook on low setting for 6 hours or on high setting for 4 hours.
  5. When done, pull the chicken into smaller pieces or serve a whole thigh per person.
  6. Serve over rice or quinoa.

Notes

  • Tip 1: I used pineapple chunks in juice so you can get a nice chunk of the fruit.
  • Tip 2: You can use crushed pineapple or pineapple bites.
  • Tip 3: For a thicker option: mix cornstarch with cold water and add to the slow cooker after the chicken is done. Stir in.
