Ingredients
  

  • 1 pound ground turkey
  • 1 cup quick cooking oats
  • 8 ounces tomato sauce
  • 1 yellow onion
  • 1/2 cup zucchini
  • 1 garlic clove
  • 1 egg
  • 1 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon Italian seasoning

Method
 

  1. In a large bowl, combine the ground turkey, oats, half of the tomato sauce, onion, zucchini, garlic, egg, salt, black pepper, and Italian seasoning. Use your hands to mix well.
  2. Shape the mixture into a loaf and place it in a greased 8x4 bread loaf pan. If you find that a loaf pan doesn’t fit inside your slow cooker, shape the meatloaf into a large football to fit snugly in the middle.
  3. Spoon the remaining tomato sauce over the top of the meatloaf. This adds a delicious glaze and keeps everything moist during the cooking process.
  4. Cover and set your slow cooker on low for 6 hours. Alternatively, you can cook it on high for 4 hours, ensuring the meatloaf reaches 160 degrees F.
  5. When it’s done, carefully remove the pan from the slow cooker and let it rest for a few minutes before slicing.
