Ingredients
  

  • 1 whole chicken 1 (4-5) pound whole chicken
  • 1 tablespoon 1 tablespoon olive oil
  • 1 teaspoon 1 teaspoon Stone House Seasoning

Method
 

  1. Preheat the oven to 425º F. Arrange the oven rack to the bottom 1/3 of the oven.
  2. Pat the chicken dry with paper towels, place the chicken into a skillet or pan, and truss (if trussing).
  3. Rub the olive oil over the whole chicken. Sprinkle with the seasoning and press into the chicken.
  4. Place the chicken into the preheated oven and roast for 15 minutes per pound until the chicken is crispy, golden, and registers 165º F when checked with an instant-read thermometer.
  5. Remove the chicken from the oven, tent with foil, and rest for 10 minutes before slicing and serving.
