  • ½ cup applesauce
  • 1 each egg
  • ½ cup milk
  • ¼ cup oil
  • 1 teaspoon cinnamon
  • 1 cup self-raising flour
  • 1 each apple medium size, grated

Method
 

  1. Preheat your oven to 180 degrees Celsius.
  2. In a medium bowl, whisk together the applesauce, egg, milk, oil, and cinnamon.
  3. Stir in the self-raising flour using a wooden spoon until just combined.
  4. Gently fold in the grated apple.
  5. Portion the batter into a mini muffin tin.
  6. Bake for approximately 15 minutes.
  7. Allow to cool in the tin until cool enough to handle, then remove and cool on a rack.
  8. Store in an airtight container for up to three days, or freeze for up to three months.
