Ingredients
  

  • ¾ cup diced roma tomatoes
  • ½ medium yellow onion, sliced
  • 2 medium bell peppers, any color, sliced
  • ¼ cup plain Greek yogurt
  • 1 ounce fajita seasoning, store-bought or homemade
  • 1 tablespoon minced fresh cilantro
  • 2 boneless, skinless chicken breasts, cut into strips
  • 8 medium flour tortillas
  • Optional garnishes: queso fresco, cilantro, lime, and Greek yogurt

Method
 

  1. Preheat your oven to 400°F. Start by greasing a baking sheet with nonstick spray to prevent sticking.
  2. In a large bowl, mix together the diced roma tomatoes, sliced yellow onion, and sliced bell peppers. Spread this colorful mixture evenly on the baking sheet.
  3. Next, in a small bowl, combine plain Greek yogurt, fajita seasoning, and minced fresh cilantro. Stir well to create a flavorful coating.
  4. Take the chicken breasts and toss them in the yogurt mixture until they are fully coated. This is where all the flavor comes in!
  5. Now, place the coated chicken onto the same baking sheet with the vegetables. Make sure everything is spread out for even cooking.
  6. Bake in the oven uncovered for about 20 to 25 minutes. You’ll know it’s ready when the chicken is cooked through and the veggies are tender.
  7. With about 8 minutes left on the timer, wrap the flour tortillas in foil and place them in the oven to warm. This step makes them soft and delicious!
  8. Once everything is done, serve the fajitas with the warm tortillas and optional garnishes like queso fresco, extra cilantro, lime, and more Greek yogurt.
