Ingredients
  

  • 4 cups water or stock
  • 2 cups old fashioned rolled oats
  • 1/2 red onion diced very fine
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon maple syrup optional
  • 1 teaspoon oil
  • 1 lb ground breakfast sausage
  • 3 green onions sliced and divided
  • 1/2 cup cheddar cheese
  • cooked sunny side up or poached eggs optional

Method
 

  1. In a pot over medium heat, bring water or stock to a gentle boil.
  2. Add the oats, red onion, salt, and garlic powder to the boiling liquid. Stir well to combine all the ingredients.
  3. Lower the heat and let it cook for about 8 to 10 minutes. Stir often, watching as the mixture thickens.
  4. If you’ve opted for it, stir in the maple syrup once the oats are cooked.
  5. While the oatmeal is cooking, heat a skillet over medium-high heat. Add a splash of oil to the pan.
  6. Once hot, add the ground breakfast sausage. As it cooks, break it apart with a spatula.
  7. Cook until the sausage is nicely browned. Remove it from the skillet and place it on a plate lined with paper towels.
  8. Once your oatmeal is ready, divide it into 4 bowls. Top with the cooked sausage, green onions, and cheddar cheese.
  9. If you want to add a protein boost, top with cooked sunny-side-up or poached eggs.
