Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 10 ounces ROTEL tomatoes with green chiles
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup shredded cheddar cheese
  • freshly chopped cilantro
  • freshly chopped green onions

Equipment

  • Chef's Knife
  • Mixing Bowl
  • Baking Sheet
  • Oven

Method

  1. Preheat your oven to 400˚F (200˚C). This ensures that your dish begins cooking evenly.
  2. In a small bowl, mix together salt, garlic powder, cumin, and chili powder. This spice blend will add a wonderful flavor to the chicken.
  3. Take your chicken breast and season both sides generously with the spice mix. Make sure to coat it evenly so every bite is flavorful.
  4. In a large casserole dish, lay the seasoned chicken breast flat. You want them to cook evenly, so arrange them without overlap.
  5. Open the can of ROTEL tomatoes and drain the excess liquid. Spoon the ROTEL mixture evenly over the seasoned chicken, making sure to cover it completely.
  6. Now, sprinkle the shredded cheddar cheese on top of the chicken and ROTEL mix. This will create a delicious cheesy crust as it bakes.
  7. Cover the dish tightly with foil and place it in the preheated oven. Bake for 25 minutes, allowing the chicken to cook through and the flavors to meld.
  8. After 25 minutes, carefully remove the foil, and let it bake for an additional 5 to 10 minutes. This step is crucial for achieving that golden, bubbly cheese topping.
  9. To ensure the chicken is fully cooked, check that it reaches an internal temperature of 165˚F (74˚C).
  10. Once done, remove the dish from the oven, and let it rest for a few minutes. Top with freshly chopped cilantro or green onions before serving warm!
