Ingredients
  

  • ½ pound Florets from 1 medium head broccoli
  • 2 tablespoons Olive oil
  • ½ teaspoon Salt
  • ¼ teaspoon Freshly cracked black pepper
  • 1 tablespoon Unsalted butter softened
  • 6 to 8 slices Bread
  • 1 cup Cheddar cheese shredded or thinly sliced

Method
 

  1. Preheat your oven to 400 degrees F.
  2. On a sheet pan, mix the chopped broccoli, olive oil, salt, and pepper.
  3. Roast the mixture for 8 to 10 minutes.
  4. Heat a skillet over medium-low heat.
  5. Spread butter evenly on one side of each slice of bread.
  6. On the unbuttered side of half of the bread slices, layer cheddar cheese generously.
  7. Add the roasted broccoli on top of the cheese, followed by more cheddar cheese.
  8. Top each with another slice of bread, ensuring the buttered side is facing out.
  9. “Grill” the sandwiches in the skillet, turning them over once. Cook until the cheese melts and the bread is evenly toasted.
  10. If using gluten-free bread, feel free to substitute as necessary.

  • Storage: Keep any leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet for the best texture.
