Method
- Preheat your oven to 400 degrees F.
- On a sheet pan, mix the chopped broccoli, olive oil, salt, and pepper.
- Roast the mixture for 8 to 10 minutes.
- Heat a skillet over medium-low heat.
- Spread butter evenly on one side of each slice of bread.
- On the unbuttered side of half of the bread slices, layer cheddar cheese generously.
- Add the roasted broccoli on top of the cheese, followed by more cheddar cheese.
- Top each with another slice of bread, ensuring the buttered side is facing out.
- “Grill” the sandwiches in the skillet, turning them over once. Cook until the cheese melts and the bread is evenly toasted.
- If using gluten-free bread, feel free to substitute as necessary.

- Storage: Keep any leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet for the best texture.
