Ingredients
  

  • 6 pieces bell peppers cleaned and dried
  • to taste Extra-virgin olive oil

Method
 

  1. Preheat your broiler to 500ºF.
  2. Place the peppers on a baking sheet.
  3. Char the peppers on all sides under the broiler until the skin is blackened and the peppers are soft.
  4. Transfer the peppers to a heat-safe bowl and cover to let them steam for about 20 minutes.
  5. Remove the charred skin from the peppers and discard.
  6. Remove the stem and seeds from the peppers and discard.
  7. Either dice or leave the peppers whole and place them in jars.
  8. To store, place in jars with a splash of olive oil and let cool before refrigerating.
