Method
- Cut the chicken into fairly small pieces (about ⅓” thick).
- Place the chicken into a large mixing bowl and add the rest of the ingredients. Mix everything well.
- Using a ⅓ cup as a measure, form patties from the mixture.
- Heat a large non-stick skillet over medium heat and add about 2 tbsp. of oil. Fry the patties, uncovered, for about 3-4 minutes on each side, until they look golden brown and are cooked through.
Notes
- Storage: Store leftovers in an airtight container in the refrigerator for up to three days. They can be reheated in the oven for best results.
- Freezing: You can freeze uncooked fritters. Shape them and freeze them on a baking sheet, then transfer to a freezer bag for up to three months. Cook them straight from the freezer, just add a few extra minutes to the frying time.
- Pairing: These fritters go wonderfully with a side of fresh salad or baked potatoes. Consider dipping them in additional Ranch dressing for extra flavor!
- Spice it Up: Add a pinch of cayenne or some chopped jalapeños for a spicy kick. Adjust according to your taste preferences.
- Herb Variations: Experiment with different herbs like parsley or chives instead of dill for a unique flavor profile.
