  1. Begin by placing the chicken breasts on a cutting board. Using a sharp knife, carefully cut horizontally through each breast. This method ensures even cooking and allows for a delightful cheese filling later on.
  2. Next, take two sheets of plastic wrap and place them over the chicken. With the flat side of a meat tenderizer, pound the chicken gently until they are of even thickness. This step helps achieve tenderness and ensures they cook evenly.
  3. In a medium bowl, mix together the mozzarella, Parmesan, ricotta, minced garlic, salt, and pepper. This creamy mixture will be the heart of your dish, so make sure it’s well combined.
  4. In a large skillet, heat the olive oil and butter over medium-high heat. The key is to let the butter melt and bubble without browning too much. You want a nice sear on your chicken!
  5. Carefully arrange the chicken in the skillet. Season the chicken generously with salt and sprinkle with one teaspoon of paprika. Cook the chicken for about five minutes. You’re looking for a beautiful golden crust to form on the bottom.
