Ingredients

  • 1/2 cup whole-wheat panko breadcrumbs
  • 1/3 cup parmesan cheese
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cracked black pepper
  • 1/2 teaspoon sea salt
  • 24 ounces boneless and skinless chicken breast halves
  • 1/2 cup Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 tomato medium, finely chopped (optional for garnishing)
  • 1 onion small, finely chopped (optional for garnishing)

Equipment

  • Chef's Knife
  • Grater
  • Mixing Bowl
  • Frying Pan
  • Baking Sheet
  • Oven

Method

  1. Preheat your oven to 375 degrees F.
  2. In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, oregano, sea salt, and black pepper. Stir this mixture well to make sure all the ingredients are evenly distributed.
  3. Next, take your boneless and skinless chicken breasts. Coat each piece thoroughly with the Greek yogurt, ensuring every surface is covered.
  4. Now, roll the yogurt-coated chicken in the breadcrumb mixture. Press lightly so that the coating adheres well.
  5. Place the coated chicken pieces on a non-stick or parchment-lined baking sheet.
  6. Drizzle a touch of extra virgin olive oil over the chicken.
  7. Slide the baking sheet into the preheated oven and bake for about 30 minutes.
  8. Once done, check the internal temperature of the chicken—it should reach at least 165 degrees F.
  9. Optionally, garnish with the finely chopped tomato and onion for a fresh touch before serving.
  10. Serve immediately and enjoy your delicious Quick Prep Parmesan Crusted Chicken with your favorite sides!
