Ingredients
  

  • 1 cup raw almonds
  • 1/2 cup raw walnuts
  • 1/2 cup raw pumpkin seeds
  • 10 large pitted medjool dates
  • 2/3 cup pumpkin puree
  • 1/2 cup unsweetened almond butter
  • 3 tbsp pure maple syrup or honey optional
  • 2 scoops Bob's Red Mill Vanilla Protein Powder
  • 1 tbsp Pumpkin Pie Spice
  • 1/2 tsp sea salt to taste
  • 2/3 cup chocolate chips optional

Method
 

  1. Start by gathering all your ingredients and placing them into a food processor. Make sure you have the raw almonds, raw walnuts, raw pumpkin seeds, medjool dates, pumpkin puree, unsweetened almond butter, pure maple syrup (or honey), vanilla protein powder, Pumpkin Pie Spice, sea salt, and, if you’d like, the chocolate chips.
  2. Process the mixture until it reaches your desired consistency. You can choose to leave it somewhat chunky for a delightful texture, or keep going until it forms a smooth paste. This step is key to achieving the right mouthfeel!
  3. If you’re opting for chocolate chips, fold them into the mixture after processing. This adds little bursts of chocolate throughout your protein balls, making each bite extra special.
  4. Once mixed, transfer your mixture into a container. It’s best to let it chill in the refrigerator for at least an hour. This allows the flavors to meld together and makes it easier to handle.
  5. After the mixture has chilled, take it out and form it into small balls. I like to use my hands for this step; it’s fun and personal. You want them to be bite-sized!
  6. Enjoy your Pumpkin Spice Protein Balls right away, or store them in a sealable container or a zip lock bag. They can be kept in the refrigerator or frozen for later. They make for an amazing snack anytime!
