  • 3/4 cup half and half
  • 1/2 cup pumpkin puree (canned or fresh)
  • 4 eggs
  • 2 1/2 tablespoons packed light-brown sugar
  • 1 1/2 teaspoons vanilla
  • 1 1/4 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon cloves
  • 9 slices hearty white bread (1-inch) such as rustic French bread or brioche

Method
 

  1. Preheat your oven to 225 degrees. This step is crucial as it will keep your French toast warm while you finish cooking the rest. Next, preheat an electric griddle to 350 degrees, or use a non-stick skillet set over medium heat. You'll want that perfect heat to achieve a golden crust.
  2. In a shallow dish, whisk together the pumpkin puree, eggs, brown sugar, vanilla, cinnamon, nutmeg, ginger, and cloves until well combined. This mixture should be smooth and well-blended, with the pumpkin and eggs creating a nice, thick batter.
  3. Pour in the half and half and whisk until it's fully incorporated. This creamy addition will make each piece of bread rich and fluffy.
  4. Next, dip each slice of the bread into the egg mixture, allowing it to soak in for a moment before flipping it to the other side. Make sure each slice is well-coated for the best flavor!
  5. Butter the griddle area where you’ll place the slice of French toast. Once melted, top the griddle with the soaked French toast, cooking until the bottom is beautifully golden brown, about 3 to 4 minutes.
  6. Carefully lift the toast and butter the griddle once more before flipping the French toast to the opposite side, cooking until it’s also golden brown, another 3 to 4 minutes.
