Ingredients
  

  • 1/2 cup old-fashioned oats
  • 4 clementines clementine oranges Freshly squeezed to get 1/2 cup juice.
  • Pinch salt
  • 1/8 teaspoon vanilla extract
  • 1 honeycrisp apple honeycrisp apple Grated on a box grater (1/3 cup).
  • 1 teaspoon lemon juice Optional (added on top of the apple).
  • Handful fresh blueberries
  • Handful toasted walnuts See note 1.
  • 1 big spoonful honey vanilla Greek yogurt
  • Honey Honey Added to taste.

Method
 

  1. Use a citrus juicer to squeeze the clementines to get 1/2 cup juice. Add the juice, oats, salt, and vanilla to a bowl or wide-mouth mason jar. Stir well (or shake with the lid on). Cover and refrigerate overnight.
  2. In the morning, stir the oats and transfer to a wide bowl. Add your favorite toppings (or the ones suggested above) and gently mix to combine. Enjoy right after topping!

Notes

  • Tip 1: To toast walnuts: add to a dry skillet over medium heat. Stir often for 4–6 minutes until fragrant and lightly browned. Remove right away so they don’t burn, then let cool.
  • Tip 2: Keep the citrus-soaked oats in a sealed jar or airtight container in the fridge for 3–4 days. Store toppings separately and add them just before eating so the fruit stays crisp and the nuts keep their crunch.
