Ingredients
  

  • 4 pieces skinless, boneless chicken breasts
  • to taste Kosher salt
  • 8.5 ounce bag Kettle Brand Potato Chips Any flavor, or a mix of flavors to equal 4 cups of crushed chips.
  • 2 pieces eggs

Method
 

  1. Preheat your oven to 400 degrees F.
  2. Trim any excess fat from the chicken breasts and cut them lengthwise to create thinner pieces.
  3. Lightly tenderize the chicken using a meat tenderizer.
  4. Season both sides of the chicken with Kosher salt to taste.
  5. Prepare a baking sheet by lining it with aluminum foil, then place a cooling rack on top.
  6. In a gallon freezer bag, add about 2 cups of potato chips. Seal the bag and crush the chips using a rolling pin until they are in small flakes.
  7. Pour the crushed potato chips into a shallow bowl.
  8. In another shallow bowl, whisk the two eggs until smooth.
  9. One at a time, dip each piece of chicken into the eggs, ensuring it's fully coated. Then, place it in the bowl with the potato chips and press the chips firmly onto the chicken.
  10. Place the coated chicken breasts on the prepared baking rack.
  11. Bake in the oven for 18 to 20 minutes until the chicken reaches an internal temperature of 165 degrees F.
  12. Serve the Potato Chip Crusted Chicken immediately on its own, or with your favorite dipping sauces!
