- Preheat your oven to 400ºF. While it's heating up, grab a 9x13” baking dish and rub it with 1 tablespoon olive oil. This will prevent the chicken from sticking and help it crisp up nicely.
- Place the chicken breasts on a flat surface. To ensure they cook evenly and are easy to stuff, consider pounding them to an even thickness. Place the chicken between two sheets of parchment or plastic wrap and gently pound with a meat mallet or rolling pin.
- Once your chicken is at an even thickness, take a sharp knife and slice through the chicken horizontally, stopping about ½ an inch from the end. This creates a pocket for the filling.
- Coat the outside of the chicken breasts with the remaining olive oil. Then, season both sides with italian herbs, salt, ground black pepper, and garlic powder for fantastic flavor.
- Open up the chicken breasts and fill each pocket with ¼ cup of shredded mozzarella and 4 slices of pepperoni. Don’t be shy—stuff them well!
- In your prepared baking dish, add 1 cup of pizza sauce to the bottom. Lay the stuffed chicken breasts on top of the sauce.
- Spread the remaining pizza sauce over the chicken, ensuring each piece is generously coated. Top with the remaining shredded mozzarella and any additional pepperoni you may have.
- Place the baking dish in the oven and bake for about 30 to 35 minutes, or until the chicken reaches an internal temperature of 160ºF. The cheese should be bubbling and slightly golden.
- If you prefer a crispy top, switch to broil for the last minute or two, keeping a close eye to prevent burning.
- Once done, remove the chicken from the oven and loosely cover it with aluminum foil. Let it rest for 5 to 10 minutes before slicing. This helps keep the juices in!

Notes
Be sure to store any leftovers in an airtight container in the fridge for up to 3 days. You can freeze the assembled chicken before baking; just wrap each piece tightly in plastic wrap and foil.
