  • 2 shots espresso or ⅓-½ cup cold brew or strong brewed coffee
  • 1 cup plain unsweetened vegan milk such as soy or oat milk
  • ¼ cup sweet potato puree make your own or use canned
  • 2 tsp pure maple syrup
  • 1 tsp agave plus more to taste
  • 1 tsp pure vanilla extract
  • ¼ tsp pumpkin pie spice blend
  • to taste vegan whipped cream optional for garnish

Method
 

  1. Combine the espresso, plain unsweetened vegan milk, sweet potato puree, pure maple syrup, agave, pure vanilla extract, and pumpkin pie spice blend in a small saucepan.
  2. Whisk the ingredients to combine and warm the mixture over medium heat. Don’t boil or simmer; just heat it enough for a nice hot latte.
  3. Season to taste with more sweetener if desired.
  4. Pour the latte into a mug, top it with vegan whipped cream, and sprinkle it with pumpkin pie spice. Enjoy!
