Ingredients

  • 2 lbs boneless skinless chicken breasts cut into strips
  • 1 egg
  • 2 cloves garlic minced
  • 2 tablespoons honey mustard
  • 1 lemon zest and juice
  • 1/4 teaspoons salt (more or less to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 tablespoons hot sauce (optional)
  • 1 tablespoon mayo
  • 2 cups chopped pecans
  • 1 cup crushed corn flakes
  • 1 pinch salt and pepper
  • 1/2 teaspoon dried oregano
  • 2 tablespoons basil pesto (optional)
  • 1/2 cup sour cream
  • 1 pinch salt

Equipment

  • Chef's Knife
  • Mixing Bowl
  • Baking Sheet
  • Oven

Method

  1. Preheat your oven to 450 degrees F. This high temperature is key to achieving that glorious golden crust on your chicken tenders.
  2. Line a baking sheet with parchment paper and spray or drizzle it with some olive oil. This helps prevent sticking and adds a bit of flavor.
  3. In a bowl, mix your chicken ingredients (except the chicken itself) until you achieve a smooth mixture. This is where the flavors start to come together. Once mixed, add in your chicken strips and toss them well to ensure every piece is coated.
  4. In another shallow bowl, combine the coating ingredients. This will create the crunchy outer layer that we all love in Pecan Crusted Baked Chicken Tenders. Be sure to mix it well!
  5. Now, take each chicken strip and coat it in the crunchy pecan mixture, ensuring both sides are well covered. Don’t be shy—pat the mixture onto each strip to get a good coating.
  6. Place each coated chicken strip on your prepared baking sheet. Repeat this process with the remaining strips until they’re all lined up, ready to bake.
  7. Drizzle or spray a bit of olive oil over the chicken strips. This will help achieve that crispy, golden finish as they bake.
  8. Pop the baking sheet into the oven and bake for 12 to 15 minutes. Keep an eye on them, especially if you cut your strips into varying sizes. They should be golden brown and cooked through.
  9. While the chicken is baking, mix your basil dip ingredients in a small bowl. This step adds a lovely touch of flavor to your dish.
  10. Once baked, serve the chicken alongside your basil dip. Enjoy your delicious Pecan Crusted Baked Chicken Tenders!

Notes

  • Don't like pecans? Use almonds, walnuts or hazelnuts for your crunch coating.
