  • 12 ounces spaghetti I recommend a classic long pasta
  • 6 tablespoons butter
  • 1 clove garlic minced
  • Juice of 2 large lemons
  • Zest of 2 lemons
  • 1 cup grated parmesan cheese
  • Salt and pepper to taste
  • Additional lemons and parmesan cheese for serving
  • Basil or Italian parsley for garnish

Method
 

  1. In a large pot, filled with salted water, boil your spaghetti until al dente. Follow the package instructions closely, as every pasta brand has a slightly different cooking time. You want the pasta to be firm to the bite, which gives it a perfect texture when mixed with the sauce. Once done, drain the pasta, reserving 1 cup of the pasta water for later use.
  2. Once your pasta is cooked and drained, place a large skillet over medium heat and melt your butter. The butter should melt completely, bubbling gently. Be careful not to let it brown; you want a nice, clear golden liquid. Just under a minute before the butter is fully melted, add in the minced garlic. This will infuse the butter with a lovely garlic aroma.
  3. Next, add your cooked spaghetti to the skillet. Gently toss it in the melted butter and garlic mixture. Pour in half of your lemon juice and half of the reserved pasta water. Using tongs, toss the pasta continuously to ensure every strand is coated, and the flavors meld together. If it feels too dry, don’t hesitate to add a bit more of the reserved water.
  4. After about three minutes of cooking and tossing, it’s time to introduce the lemon zest, the remaining lemon juice, and the parmesan cheese. Keep stirring, allowing the cheese to melt and create a creamy sauce that clings to the pasta. The mixture should be luscious but not overly saucy. The key is to create a light coating that enhances the spaghetti without drowning it.
  5. Season your pasta with salt and pepper to taste. This step is crucial; always taste and adjust according to your personal preference. Remember, a little seasoning can elevate the whole dish! The pasta is ready when it’s evenly coated in the sauce and the cheese has melted beautifully.
