Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 egg
  • 2 tablespoons fresh lemon juice
  • 1 cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 zest of one lemon
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • fresh lemon slices for serving

Equipment

  • Chef's Knife
  • Whisk
  • Grater
  • Mixing Bowl
  • Baking Sheet
  • Oven

Method

  1. Start by trimming the chicken and cutting it into serving-size pieces. This ensures even cooking and makes it easier to enjoy. The key is to make sure they are roughly the same size for uniform cooking.
  2. In a medium bowl, whisk together the egg and lemon juice. This mixture will act as the adhesive for the breadcrumbs, so ensure it’s well combined.
  3. Take the chicken pieces and place them in the egg mixture. Cover the bowl and refrigerate for thirty minutes. This step infuses flavor and helps the coating stick better.
  4. Preheat your oven to 400°F (or 200°C). This temperature helps achieve that perfect crispy texture.
  5. Line a baking sheet with parchment or foil and set it aside. This prevents sticking and makes cleanup a breeze.
  6. In a shallow dish, whisk together the breadcrumbs, Parmesan cheese, lemon zest, garlic powder, salt, and pepper. This mixture should be even and well blended to ensure a consistent coating.
  7. Dip each chicken piece into the breadcrumb mixture, ensuring both sides are coated thoroughly. Press down slightly to help the crumbs adhere.
  8. Place the coated chicken on the prepared baking sheet. Make sure they are spaced out to allow even cooking.
  9. Spray the chicken lightly with cooking spray to enhance browning and crispiness.
  10. Bake for 15 minutes. At this point, the chicken should start to look golden. Carefully flip each piece using tongs.
  11. Return to the oven and bake for an additional 10 minutes, until crispy and golden brown. The internal temperature should reach 165°F (or 74°C) for safety.
  12. Once done, remove from the oven and serve with fresh lemon slices for a bright presentation and added flavor. Enjoy your meal!

Notes

Store any leftovers in an airtight container in the fridge for up to three days. Reheat in an oven to maintain crispness.
