Preheat your oven to 250ºC/480ºF. Place two baking trays inside the oven to heat them up.
If you are using chicken breasts, cut them into thin strips and place them in a large bowl.
Sprinkle the bicarbonate of soda over the chicken. Use your hands to turn the chicken, ensuring every piece is coated. Let it tenderize for about 10 minutes.
Meanwhile, place the corn flakes into a large ziplock bag. Use a rolling pin to crush them into a fine crumb. Once crushed, add in the panko breadcrumbs, flour, paprika, black pepper, and salt.
After the chicken has tenderized, it’s time to wash off the bicarbonate. Fill the bowl with water, agitate the chicken with your hands, and pour away the water.
Drain the chicken well after rinsing. Add the chicken into the bag of crumbs.
Remove the baking trays from the oven and carefully line them with cooking paper. This prevents the chicken from sticking.
Lay the coated chicken pieces on the tray. Make sure they are not overcrowded.
Spray a light mist of olive oil over the chicken. This step is essential for achieving that golden color.
Bake the chicken for 5 minutes. Then, remove the tray from the oven, turn each piece of chicken over, and bake for an additional 5 minutes or until fully cooked through.
Just before serving, sprinkle a little sea salt on top.
