Ingredients

  • 1/2 cup sun-dried tomatoes oil drained
  • 1 pound chicken breasts or thighs, cubed
  • salt and black pepper to taste
  • 4 teaspoons Italian seasoning
  • 2 tablespoons butter salted
  • 2 cloves garlic chopped
  • 3/4 - 1 pound pasta short cut
  • 2 cups whole milk
  • 2 ounces cream cheese
  • 2 cups baby spinach chopped
  • 1/2 cup parmesan cheese grated
  • 1/2 cup basil fresh chopped

Equipment

  • Chef's Knife
  • Grater
  • Mixing Bowl
  • Wooden Spoon

Method

  1. In a large pot set over medium-high heat, combine the oil from the sun-dried tomato jar with the chicken and 2 teaspoons of Italian seasoning. As the chicken cooks, keep an eye on it to ensure it turns golden brown and is cooked through, which should take about 5 minutes. Once done, scoop the chicken out and set it aside.
  2. Next, add the butter and chopped garlic to the pot. Allow it to cook for about 2 minutes or until your kitchen fills with that amazing aroma. Then, stir in the pasta along with 2 cups of water. Keep an eye on it as it cooks, stirring occasionally until the pasta is al dente, which will take about 8 minutes.
  3. Once the pasta is cooked, it’s time to add the creamy goodness. Stir in the whole milk, cream cheese, and parmesan cheese. Mix it all together until you achieve a creamy consistency. You want to make sure every piece of pasta is well-coated in that luscious sauce.
  4. Now, it’s time to bring everything back together. Gently slide the cooked chicken back into the pot, along with the chopped spinach and sun-dried tomatoes. Mix everything together carefully so that the spinach wilts but retains its vibrant color. Remove the pot from heat and stir in the fresh basil.
  5. Serve your One Pot Marry Me Chicken Pasta immediately, garnished with extra parmesan and a sprinkle of fresh basil. Trust me, everyone will be fighting for the last bite!
