Ingredients

  • 16 ounces dry pasta
  • 1 tablespoon butter
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 2 cups cooked chicken
  • salt to taste
  • chopped chives if desired
  • mozzarella cheese optional

Equipment

  • Chef's Knife
  • Blender
  • Wooden Spoon
  • Oven

Method

  1. In a large pot, cook the pasta according to the package directions. Drain the pasta.
  2. In the same large pot, sauté minced garlic in butter over medium heat until tender.
  3. Stir in heavy cream, Parmesan cheese, drained pasta, and chicken. Blend until the cheese has melted. Season with salt and pepper to taste.
  4. Sprinkle with chives and add mozzarella cheese if desired. You can broil the pot to brown the cheese if desired.

Notes

  • The secret to restaurant-quality Alfredo: Always use freshly grated Parmesan cheese. Pre-shredded varieties contain anti-caking agents that prevent proper melting.
  • Extra flavor boost: Reserve a tablespoon of pasta cooking water before draining and add it to your finished dish for consistency.
