Ingredients
  

  • 1.75 cups Oat Flour Main ingredient for the bar's base
  • 1 cup Gluten-Free Flour Use all-purpose if not gluten-free
  • 4 tablespoons Sugar Sweetens the bars
  • 2 teaspoons Baking Powder Helps the bars rise
  • 1 teaspoon Baking Soda Another leavening agent
  • 0.5 teaspoon Salt Enhances sweetness
  • 5 tablespoons Cold Butter Adds richness
  • 1 cup Vanilla Greek Yogurt Provides moisture
  • 1 whole Egg Yolk Binds the mix together

Method
 

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine oat flour, gluten-free flour, sugar, baking soda, baking powder, and salt. Mix well.
  3. If you have a food processor, pour dry ingredients into a food processor, and add in the cold butter and pulse a few times until ingredients start to clump together.
  4. Pulse in the vanilla, yogurt, egg yolk, and chocolate chips until just combined. Do NOT over mix.
  5. Transfer dough to a surface dusted with gluten-free flour. Knead very gently until dough starts to form a ball.
  6. Gently pat the dough down to 3/4" thick. Cut dough into 12-16 equal size pieces.
  7. Carefully move the pieces to a baking sheet lined with parchment paper.
  8. Brush each bar with a bit of half and half, and sprinkle with coarse sugar if desired.
  9. Bake for approximately 16-20 minutes or until bars are lightly browning and spring back when touched.
  10. Remove from oven and let cool completely.
