Ingredients

  • ¼ cup Sugar
  • 2 tablespoons All-purpose flour
  • ¼ cup Cocoa
  • 1-1½ cups Cold water
  • ¼ teaspoon Salt
  • 1 teaspoon Cinnamon
  • ¾ teaspoon Cloves
  • 6 cups Milk
  • Whipped cream for topping
  • Nutmeg for garnish
  • 1 teaspoon Vanilla extract

Equipment

  • Large Pot
  • Wooden Spoon

Method

  1. Start by gathering all your ingredients: Sugar, Flour, Cocoa, Cold water, and your spices including Salt, Cinnamon, and Cloves. This ensures you won’t have to scramble while cooking.
  2. In a medium pot, combine Sugar, Flour, Cocoa, Cold water, and spices. Stir well to mix all the dry ingredients evenly. The mixture should be free of lumps, so you may want to use a whisk for this step.
  3. Place the pot over medium heat. Keep stirring continuously for about 4 minutes. You'll notice the mixture thickening slightly and bubbling, which is a good sign that the flavors are melding.
  4. Once you see it bubbling, it's time to add in the Milk. Pour in 6 cups of Milk slowly while stirring. This is where the hot chocolate starts to become creamy and luxurious.
  5. Let the mixture continue to heat, stirring occasionally. Watch for it to scald but do not let it boil. The ideal temperature is just below boiling, where you can see steam rising.
  6. After a few minutes of heating, once it's hot enough, stir in the Vanilla extract. This will enhance the flavor beautifully. Be careful not to overheat after adding the vanilla, as you want to maintain that creamy texture.
  7. Remove the pot from the heat. If you like, this is a great time to taste and adjust sweetness or spice levels, adding more Cinnamon or Sugar if desired.
  8. Serve the Mexican Hot Chocolate in mugs. If you want to elevate the experience, top each cup with a generous dollop of Whipped cream and a sprinkle of Nutmeg.
  9. Finally, gather your loved ones and enjoy your homemade Mexican Hot Chocolate together. It’s the perfect cozy drink that invites warmth and conversation.

Notes

  • Scalding: This method involves heating the mixture until it’s just about to boil. Once you see bubbles forming around the edges, it's time to remove it from the heat and add the vanilla.
  • Thickness: Expect the Mexican Hot Chocolate to be thicker than the usual hot chocolate. This is thanks to the addition of Flour or Masa harina, which creates a creamy texture.
  • Cocoa Quality: For the best results, use unsweetened natural or Dutch-processed Cocoa powder, as it enhances the flavor profile. Avoid using hot chocolate mixes.
  • Serving Temperature: Always serve the drink hot. If it cools down too much, simply reheat gently on the stove, stirring to maintain its creaminess.
  • Spice Customization: Feel free to experiment with spices. You can add a pinch of cayenne for heat or even a splash of almond milk for a different flavor.
