Ingredients
  

  • 1 15-oz can garbanzo beans drained and rinsed
  • 1 medium-sized cucumber chopped
  • 2 cups cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • cup feta cheese crumbled
  • 2 Tbsp avocado oil
  • 1 Tbsp lemon juice
  • 2 cloves garlic minced
  • ½ tsp sea salt to taste
  • ¼ tsp black pepper
  • ½ tsp dried oregano

Method
 

  1. Drain and rinse the garbanzo beans and pat them dry with a paper towel.
  2. Transfer the garbanzo beans to a large bowl along with the cucumber, cherry tomatoes, red onion, and feta cheese.
  3. In a measuring cup or small bowl, whisk together the ingredients for the dressing.
  4. Pour the dressing over the salad and toss until everything is well-coated.
  5. Taste the chickpea salad for flavor and add more salt, lemon juice, or feta cheese to your personal taste.
