Ingredients
  

  • 114 oz Sweetened, flaked coconut this is slightly more than 5 and 1/2 cups coconut
  • 114 oz Sweetened condensed milk you will leave about 2 tbsp in the can
  • 1 tsp Vanilla
  • 2 Egg whites
  • 1/2 tsp Salt

Method
 

  1. Preheat your oven to 325 degrees F.
  2. In a large mixing bowl, combine almost the entire can of sweetened condensed milk with the sweetened, flaked coconut. Stir to combine and set aside.
  3. In another bowl, crack open the two egg whites and add a pinch of salt. Use a hand mixer or whisk to beat until soft peaks form.
  4. Gently fold the whipped egg whites into the coconut mixture.
  5. Prepare your baking sheets by lining them with parchment paper or silicone baking mats.
  6. Using a spoon or cookie scoop, drop about two tablespoons of the mixture onto the prepared baking sheets.
  7. Bake for about 25 minutes, until starting to turn golden brown.
  8. Remove from the oven and let sit for a minute before transferring to a wire rack.
  9. Allow to cool completely before enjoying.

Notes

  • Tip 1: You do not need to specifically measure the sweetened condensed milk, just pour most of it into your bowl, leaving approximately 2 TBSP in the can.
  • Tip 2: Make sure to use a silicone baking mat (highly recommended) or if you don't have silicone mats, use parchment paper (sprayed with non-stick cooking spray).
  • Tip 3: Remove cookies from the baking sheets immediately after they come out of the oven.
  • Tip 4: Store covered, best eaten within 3 to 4 days.
