Ingredients

  • Tortilla Chips
  • Vegan Cheese
  • Taco “Meat”
  • Chopped Tomato
  • 2 tablespoons Chopped Scallions
  • 1 Serrano or Jalapeno
  • Sliced Avocado
  • Pickled Onions
  • 1 tablespoon Chopped Cilantro
  • Lime Wedges

Equipment

  • Chef's Knife

Method

  1. Start by spreading the tortilla chips evenly on a large platter or baking sheet. Make sure they’re in a single layer to ensure every chip is topped perfectly.
  2. Next, drizzle the vegan cheese sauce over the chips. You want to cover the chips generously so that each one gets that gooey, melty goodness.
  3. Now, it’s time to add the taco “meat”. Spoon it over the nachos, spreading it evenly to ensure every bite has a hearty piece of the savory filling.
  4. Top with the chopped tomato and scallions. These fresh toppings bring color and texture, making the dish visually appealing.
  5. For some heat, sprinkle the serrano or jalapeno slices across the top. Adjust the amount based on your heat preference.
  6. Add the sliced avocado next. You can either place the slices on top or create a small bowl of guacamole on the side for dipping.
  7. Next, scatter the pickled onions and any sliced radishes you’ve chosen to include.
  8. Finally, sprinkle the chopped cilantro over the top as a finishing touch. Not only does it add a burst of freshness, but it also looks beautiful against the vibrant colors.
  9. Once everything is assembled, it’s time to dig in! Serve immediately while the nachos are warm and the cheese is gooey.

Notes

How to store leftovers: Keep any leftover nachos in a separate container to avoid sogginess. They can be enjoyed within a couple of days!
