- In a medium bowl or a mason jar, combine lemon juice, olive oil, honey, and dijon mustard. These ingredients will form the base of your dressing. Whisk them together until they’re well combined and smooth, or if using a jar, secure the lid and shake it vigorously.
- Add in the minced garlic, shallot, chopped thyme, rosemary, and a pinch of salt and pepper. This is where the flavor really starts to develop! Use a whisk or shake the jar again to ensure everything is evenly distributed.
- After mixing, taste your dressing. This is the moment to adjust flavors! If it’s too tangy, add a touch more honey. If it needs more acidity, add an extra squeeze of lemon juice.
- Once satisfied with the flavor, transfer your dressing to an airtight container if you used a bowl. It can be stored in the fridge until you’re ready to use it. This dressing is best served fresh but can last up to five days in the fridge.
- Before serving, give your dressing a good shake or stir to recombine the ingredients as they may separate over time.
