Homemade Cheeseburger Macaroni

Ingredients
  

  • 1 pound ground beef
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 oz cream cheese
  • 2 1/2 cups beef broth
  • 1 tbsp cornstarch
  • 1/2 cup half and half
  • 2 cups pasta elbow macaroni or small shells
  • 1 cup shredded cheese cheddar, monterey, colby jack work well

Method
 

  1. In a large deep skillet or Dutch oven, brown ground beef over medium heat. If desired or needed, drain off fat. Sprinkle in paprika, garlic powder, onion powder, salt, and black pepper and stir to combine. Add in cream cheese and as it melts, stir to combine.
  2. Once beef has been browned, pour in two cups of beef broth. Add cornstarch to the remaining beef broth until well combined, with no clumps remaining. Pour into beef and broth mixture in pan, and stir to combine.
  3. Add in half and half and dried pasta. Bring to a simmer. Cover and let simmer for approximately 8-10 minutes, stirring occasionally.
  4. Add in shredded cheese, and either stir to combine, or allow to melt on top by removing the pan from the burner and letting sit covered for 2-3 minutes. Serve immediately.

Notes

  • Tip 1: Different shapes and brands of pasta cook at different times. Start by cooking your pasta mixture for the minimum amount of time listed on the pasta package directions. At that point check pasta by tasting a piece or two, to see if it’s done to your liking. Pasta should be cooked, but al dente. Avoid over cooking pasta.
