- Preheat your oven to 350°F. This temperature is perfect for baking and will ensure even cooking. While the oven heats up, lightly grease an 8 ½ or 9-inch pie tin with coconut oil and set it aside.
- In a blender or food processor, grind the buckwheat groats until they appear “cracked.” You want most of the grains to be visibly split in half. Avoid over-processing, as you want to maintain some texture. Once done, dump the ground buckwheat into a large bowl.
- Add the baking powder, ground flaxseed, vanilla powder, cinnamon, nutmeg, ground ginger, and sea salt to the bowl. Stir lightly to combine, ensuring even distribution of the spices throughout the buckwheat.
- In a medium bowl, whisk together the coconut milk and maple syrup until smooth. This mixture will add moisture and sweetness to your dish.
- Now, it’s time to start layering! Pour a third of the coconut milk mixture into the greased pie dish. This will create a delicious base for your layers.
- Evenly sprinkle half of the buckwheat mixture over the milk. Make sure to cover it completely for even baking.
- Top the buckwheat with half of the walnuts and half of the small-diced apple. If you like, grate some extra nutmeg or sprinkle additional cinnamon here for an added flavor boost.
- Pour another third of the coconut milk mixture on top, ensuring it covers the layers nicely.
- Add the remaining half of the buckwheat mixture, followed by the last of the coconut milk, and finally, garnish with the remaining walnuts and diced apple on top.
- Give your pan a good shimmy-shake and a few light taps on the counter. This helps to release any air bubbles that may have formed. It may look like a messy mixture at this point, but trust the process!
- Finally, drizzle the melted coconut oil on top to add a lovely finish to your bake. Slide the dish into the oven and bake for 45 to 50 minutes or until the top is golden and everything is set.
- Once baked, serve the Hearty Apple Spice Baked Buckwheat warm with extra maple syrup and a scoop of coconut milk yogurt for a delightful touch.
