Ingredients
  

  • 1/2 cup quick oats
  • 2 cups water
  • 1 cup skim milk or almond milk
  • 1 cup ice
  • 1/2 cup pumpkin puree
  • 3 tbsp brown sugar or maple syrup
  • 1 tsp cinnamon
  • to taste pumpkin pie spice

Method
 

  1. Cook quick oats and water in a small pot for about a minute or two, stirring often until it becomes thick and bubbly. Remove from heat and let it cool.
  2. In a blender add skim milk, pumpkin puree, brown sugar, cinnamon, and pumpkin pie spice.
  3. Add the cooled oats and ice.
  4. Blend on high until very smooth.
  5. Chill in refrigerator or pour in a glass over ice.
  6. Enjoy!
