Ingredients
  

  • 4 medium sweet potatoes
  • 3-4 tablespoons olive oil
  • 6 tablespoons unsalted butter melted
  • 2 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon fresh chives finely chopped (or 1 tsp dried)
  • 1 teaspoon fresh rosemary finely chopped (or heaping ¼ tsp dried)
  • 1 teaspoon fresh thyme finely chopped (or heaping ¼ tsp dried)
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • pinch ground nutmeg
  • 8 ounces regular or smoked Gouda cheese thinly sliced into 1-inch squares

  • Herb Goat Cheese
  • green onions

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit. This high temperature is key to achieving that golden-brown exterior.
  2. Line a baking sheet with aluminum foil and spray it with nonstick cooking spray. This will make cleanup easier and prevent the potatoes from sticking.
  3. Next, wash the sweet potatoes thoroughly and dry them well. It’s important to scrub off any dirt, as you’ll want to enjoy the skins. Pat them dry to ensure they get nice and crispy during cooking.
  4. Prepare the potatoes by making a series of 1/8-inch cuts along the top of each potato, stopping about half an inch from the bottom. This creates the Hasselback effect, allowing flavors to penetrate and crisp up nicely.
  5. Place the sliced sweet potatoes on the prepared baking sheet and drizzle some olive oil over them. Make sure to rub the oil into the slices and all over the potatoes; this ensures even cooking and browning.
  6. Now, it’s time to bake them! Place the baking sheet in the oven and let them roast for 40 minutes. Typically, the edges will become golden and start to crisp up.
  7. As the potatoes roast, whisk together all of the Herb Butter ingredients in a bowl. This is crucial for adding flavor between the slices later.
  8. After 40 minutes, take the potatoes out of the oven. With a brush, carefully apply the Herb Butter mixture between the cuts and all over the tops. You’ll see that the butter will melt and seep into the slices.
  9. Return the Hasselback Sweet Potatoes to the oven and bake for an additional 10 to 20 minutes, or until the center slices are very tender. This is the moment when the magic occurs!
  10. Once they’re done, brush any accumulated butter from the bottom of the pan over the potatoes for an extra layer of flavor. Season with additional salt and pepper to taste.
  11. Serve your Hasselback Sweet Potatoes hot, topped with sour cream, Herb Goat Cheese, or even the optional Gouda cheese melted in between the slices. Enjoy every bite!
