Ingredients
  

  • 1 small 5-pound seedless watermelon cut into eight 1-inch wedges
  • 2 tablespoons olive oil
  • to taste salt
  • to taste freshly ground black pepper
  • 8 cups arugula (washed and dried)
  • 2 tablespoons balsamic vinegar
  • 1 cup crumbled feta or goat cheese

Method
 

  1. Preheat your grill to medium.
  2. Brush the watermelon with olive oil. Season with salt and pepper.
  3. Grill the watermelon wedges for 1 to 2 minutes on each side.
  4. In a medium bowl, toss the greens with the balsamic vinegar. Season with salt and pepper to taste. Set aside.
  5. To assemble the salads, sprinkle each grilled watermelon wedge with feta or goat cheese. Top with the greens.
  6. Sprinkle a little more cheese on top, if you'd like.
